Capacity: 14 Inches in Diameter


The All-Clad wok is 14 inches in diameter. It’s about an inch shallower than the standard 4″ inch in depth in other brands. Still, it’s a generous size to stir fry a good amount of food for a mid to large family.

The unique product strength in this wok is in the tri-ply construction of the material. The three layers consist of 5mm aluminum in the middle sandwiched by two layers of 18/10 stainless steel on the inner and outer surface. The same structure extends all the way up to the side walls of the wok for the consistent heat distribution and retention.

The exterior layer is of stainless steel magnetic compatible with induction cooktops.

In fact, the so-called “sandwiching” process was patented by the President of All-Clad’s, John Ulam himself. In the technical term, this process is referred to as “cladding”. John holds more than 50 U.S. patents for combining different metals in cookware and other applications of metallurgy.

It’s very easy to use, just like using another frying pan. For authentic Asian cuisine, you’ll need to sear the meats/or seafood at high temperature between 375 to 400 degrees F. Then add the mixed veggies and sauces. The entire process should be within 5 to 10 minutes. Otherwise, you’d defeat the purpose of stir-frying.

The wok is dishwasher safe. Personally, I’d find it hard to put such a big size cookware in the dishwasher. So hand-washing it with warm, soapy water might be more appropriate. If there is food stuck on the bottom for whatever reason, it may require a longer soaking time. Then you can scrub it with a gentle kitchen brush, rinse and dry.

ProsThe tri-ply construction of the wok is a big plus for fast heating and even heat distribution. The extension of the same construction to the side walls ensures that food is cooked not only on the bottom, but also on the sides of the wok.

It’s versatile to cook various types of dishes besides stir-frying. Use it for braising meats. Use it as a deep-fryer. Simmer a pot of hearty soup for your soup and salad night. It’s much easier to care for than the non-stick, cast iron or carbon steel woks. It lasts forever. It works with all sorts of heat sources.

ConsIt’s expensive. It’s heavier to do the tossing and flipping stunts in Asian cooking. A couple of customers reported the narrow handle is not very easy to manage. You need to be very careful with the ridge on the handle.
